Well, it's important to remember that this house has been converted for modern use as a hotel. So there may have been staff bedrooms in the past, but they were turned into guest bedrooms, or maybe into the lounge areas in the bottom (below-ground) floor. I also think that the side wing was a later addition. As far as balls go, you didn't have to have a ballroom, if you only had a sitting room or parlor large enough to accept enough couples. The current dining room, for instance, is rather spacious.
Certainly my initial impression on looking at it was that it looked like a Longbourn, but when I saw how many rooms it has, even in the main part of the house, I really began to wonder. How much house did 2,000 pounds really get you? I don't feel like the movies are a reliable source on this, or the size of Netherfield, which they always depict as vast.
