Because it's easier?

The versions of characters you're describing are softer versions, easier to write and easier to read. In canon, Elizabeth and Darcy both have sharp edges, and it's sometimes very difficult to capture that even if you want to. They have real, serious flaws, yet somehow are still captivating to each other, and to an audience two hundred years later.
