Saying "Charlotte" instead of "Elizabeth" was forced due to the change in the movie plot respect to the novel. In the novel, Lady Catherine says that during the first evening that she invited the Hunsford party after her nephews had come. By that time, Elizabeth had been at Hunsford for two weeks, and they had been dining at Rosings twice a week, not counting the times that Lady Catherine visited the Parsonage. There were many occasions for Lady Catherine to tell Lizzy that she must practice more. On the contrary, in the movie, Elizabeth goes to Rosings as soon as she arrives to Hunsford; Darcy and Col. Fitzwilliam are already there. They cannot make Lady Catherine say that she had told Elizabeth "several times that she will never play really well unless she practices more", because this is the first time they have met! So instead of omitting the quotation entirely, they change it to Charlotte.
