Lavender is a relaxant, and is used if someone is much exercised in the sensibility. It works on panic attacks too. Ammonia based restoratives are used in a vinaigrette, a fancy, usually silver, box with pierced work to allow the smell out. Hartshorn is what it says and is ground up and drunk, its efficacy is dubious but was much rated at the time.
Lavender was, as the name implies, used in laundry to make the clothes smell nice, which as whites were still in places bleached with stale urine makes even more sense. Washing blue was new. It was also used for headaches, I use an old recipe for home-made eau-de-cologne which uses lavender, rosemary and cloves, which is surprisingly effective.
