I've had my iPad Air for all of a week and I am by no means an expert (and most of them I just transfered over from my iPodTouch).
One that is new to me though that I'm really enjoying is Sketchbook Pro. If your kids are little artists they will like it as well. It's pricey $4.99 (because it is a actual Pro App), but I am sure you can find some freebies out there as well. Fingers work, but a stylus is best.
Another App I like (and "full disclosure" not because I backed them on Kickstarter) is Markup, originally developed for teachers to grade papers, but for writers, I think it is a good little App for marking up your mistakes and typos on the go.
Also, more practical, be sure to download either a Kindle or Nook App so that you can still read your ebook purchases.
